Mexican Chicken Alfredo Casserole - for when you can't decide between Mexico and Italy for dinner! It is very easy to make and tastes amazing! Chicken, pasta, Alfredo sauce, taco seasoning, salsa, onions, ricotta cheese, and parmesan cheese. Can make in advance and cool or freeze for later.

- 4 cups of cooked chicken
- 2 tablespoons of chopped onion flakes
- 1 cup of ricotta cheese
- 1 (16-oz) penne paste package
- 2 (15-oz) Alfredo sauce jars
- 1 (1 ounce) taco seasoning package
- 1-1 / 2 cup salsa
- Grated 1-1 / 2 cup Parmesan cheese
INSTRUCTIONS:
- First step preheat the oven to 350ºF. Spray a 9x13 inch pan with a cooking spray.
- Cook the pasta according to the instructions on the pasrta wrapper. drain well.
- Combine cooked chicken, onions, Alfredo sauce, salsa, Ricotta cheese and taco seasoning. Stir the cooked pasta. Spread into prepared pans.
- Top casserole with grated parmesan cheese.
- Bake covered for 50 to 60 minutes, until it is full of bubbles.
NOTE:
- Can make in advance and cool or freeze for later.
- To bake after freezing, thaw it completely then continue using the instructions as directed above.
- Can split casseroles between two 8x8 inch pan.
